Strawberry Puree

Here's an easy way to introduce Vitamin rich strawberries for your babies.
Before proceeding make sure you wait until your baby is 9 months old.
Get organic strawberries of high quality.

SELECT  uncut ,organic strawberries.
WASH & PEEL :
Sprinkle salt over the fruits and wash thoroughly
Peel off the stems.
Cut into halves.
COOK in a steamer for 2min and immer in cold water to stop the cooking process.
PUREE the berries in a blender and store.

Storage:
Place the puree in 2ounces baby jars for 3 days in refrigerator and for 3months in the freezer.

Serving Suggestions:

Strawberry-Banana 
Strawberry-Banana
3ounces strawberry puree
  1 Large banana
 1. Mash together and serve.

Strawberry-Yogurt
   Add a spoon or two in plain yougurt and serve.

Try mixing tart strawberry puree with 
Applesauce,
Pear,
Peach
Mango
Blueberries

Whenever trying new foods,make sure to follow a 1Week wait rule before introducing another solid to your baby.
If your baby show any different signs ,immediately stop giving the food and try again after a couple of weeks.


Remember, always consult with your pediatrician regarding introducing solid foods to your baby and specifically discuss any foods that may pose allergy risks for your baby

After a long time...

Hello friends,

Really a long long time to see.
Motherhood pushed me into world I cant imagine or explain.
Now,as things started to falling on their places(it appears at least),am trying to post some recipes not only to us but also to babies for the first solids and some snacks or food for toddlers.

My 2yr old daughter kept me really busy and I,myself started gardening,a hobby that I love most.
Little succeed in there but lot of satisfaction that I couldn't get any where.Will share pics later.

Fall around, I started baking.Succeeded after a lot of failures,
Here I am posting brownies that I love preparing and eating a lot.

Would prefer this site for the beginners like me in baking.

I did this half a dozen times experimenting every time and this recipe never failed me.
You all can give a try.


Ingredients:
  • 10 tablespoons (145 g) unsalted butter
  • 1 1/4 cups (250 g) granulated sugar
  • 3/4 cup plus 2 tablespoons (65 g) unsweetened cocoa powder (natural or Dutch-process)
  • 1/4 rounded teaspoon Kosher salt
  • 1 teaspoon vanilla extract
  • 2 large eggs, cold
  • 1/2 cup (70 g) all-purpose flour (Used Gold Medal unbleached all-purpose flour)
  • 2/3 cup (75 g) chopped walnuts or pecans (optional)
Directions :
  1. 1. Add water to a medium saucepan so that it is 1 to 2 inches deep. Heat water until barely simmering. 
  2. 2. Combine butter, sugar, cocoa powder and the salt in a medium heat-safe bowl. Rest bowl over simmering water (if the bottom of the bowl touches the water, remove a little water).
  3. 3. Stir mixture occasionally until the butter has melted and mixture is quite warm. Remove the bowl from heat and set aside for 3 to 5 minutes until it is only warm, not hot.
  1. 4. Add vanilla and then add eggs, one at a time, stirring vigorously after each one.
  2. 4. Add the flour and stir until fully incorporated, then beat with the wooden spoon or spatula for 40 to 50 strokes. (The batter will be quite thick). Stir in nuts, if using. Spread evenly in lined pan.
  3. 5. Pre-heat oven to 325 degrees F (163 C).Position pan and bake 20 to 25 minutes or until a toothpick can be inserted into the center and come out almost clean
  4. Cool completely then remove from pan. For the cleanest lines when cutting, place into freezer for 20 to 30 minutes to firm up. Cut into 16 squares.

  1. Notes and Tips

 Line the bottom and sides of an 8-inch (20cm) square baking pan with parchment paper or aluminum foil, leaving an overhang on two opposite sides. (This helps when removing the baked brownies from the pan, once cooled)
- You can reduce sugar a little bit and add your favorite 3-4 pieces of dark chocolate.I tried with dairy milk.
- You can add instant coffee powder for different taste.Add 1/4tsp of nescafe powder.
- Replaced 1/4cup of sugar with brown sugar.

Spicy Salmon Fry

Last week when in a restaurant,we ordered fish fry.The taste was not well.So thought of having fried fish at home.Tried simple ingredients with Salmon fish and it was good.

Ingredients :
15 small slices of Salmon fish,washed
1 tsp of ginger garlic paste
2 tsp chillie powder
1 tsp cumin and coriander powder
pinch of turmeric
salt accordingly

6-7 chillies
bunch of curry leaves
cup of vegetable oil

Method:
1.Salmon fish is very thick in size.Make sure to slice them in thin pieces.
 

2. Add ginger garlic paste,chillie powder,cumin&coriander powder,turmeric,salt and mix well.
3. Add the fish pieces and marinate them in the paste and keep it aside for 1 hour.
4. Bring heat oil in a kadai and fry the fish by flipping both sides until it becomes red in color.
5. Remove fish from kadai and add chllies and curry leaves,Saute them for few seconds and garnish on the fried pieces.

Madatha Kajaa

One of Andhra's favorite and famous sweet.Tried for the first time and it came out really really well.
All credit goes to my husband who helped me a lot :)


Ingredients :


For making kaja:-

Maida/All purpose flour 2 cup
Ghee/oil                        3 tspns
pinch cooking soda(optional)
water (enough to make a dough like chapati dough)
Oil for deep frying

For making sugar syrup:-

Sugar 3 cups
water 2 cups ( just enough water to cover the sugar)

Method :



  • Take the flour in a bowl,mix it with ghee and water and make a dough.Cover it and keep it a side for 15-20 min.
  • Now take a huge bowl and add sugar and water, keep flame in medium to high. Stir occasionally until the sugar melts in water and the syrup comes to one string consistency . Add the elachi / cardamom powder in the sugar syrup
  • Now mix the dough once again and make small balls out of the dough.
  • Roll the ball on clean surface with rolling pin like single chapati… dough should be rolled to very thin layer.Sprinkle the flour in between while rolling.Make chapathis out of each balls.
  • Starting from the end of each chapathis, carefully  fold  like roll,sprinkling flour between each rolls so that the rolls should not stick to each other.
  • Cut and remove the edges and cut the roll in small 1 inch pieces.Press each  piece slightly with thumb and  roll it with rolling pin(very slightly) twice n keep it on a plate.Repeat the process with the rest of the chapathis.
  • Heat enough oil in a kadai for deep frying . Fry the kaja pieces till they turn to nice golden color.
  • Remove them once golden brown and place them in sugar syrup.Wait for 4 to 5 minutes or till the syrup is well absorbed by those pieces and remove them and serve once cool down.

    Halwa Bobbatlu...

    Got some time and interest to try out something new.
    Its being a long time and sweet-tooth inside me started craving for something new.
    Here I tried out halwa bobbatlu where I got this recipe from different sources of web.


    Ingredients:
    Sooji / Semolina 1 cup
    Granulated Sugar 1 cup
    Plain Milk 2 cups
    Maida/All purpose Flour 1 cup
    Salt a pinch
    Ghee to taste

    Preparation:
    1.Knead plain flour and salt into soft dough using enough water.Pat some ghee on top of the dough and keep covered for at least half an hour.
    2.Heat a tbsp of ghee in a pan on low flame, and add semolina to the same pan.Fry until semolina turns golden brown and remove from heat.
    3.Bring milk to boil in a sauce pot, stir in fried semolina and sugar.Cook on medium flame until all the milk is absorbed or until semolina separates from the sides of pot.Make sure semolina is cooked and remove from heat.
    4.Once cooled, make lemon sized balls out of the cooked semolina and keep aside.
    5.Take lemon sized(half of the size of semolina ball) ball out of the prepared plain flour dough.
    6.Stuff the prepared semolina ball into the dough and flatten it on a greased zipper bag.
    Place the rolled out semolina puri for later use.
    7.Repeat the same until all the semolina balls are finished.
    8.Heat a flat pan on medium heat, place the rolled out puri.Fry on one side until golden brown, grease it with little ghee if you wish.Turn on other side and fry until golden brown.
    9.Repeat the same with remaining puris.Garnish with fried cashews and rasins and serve hot or cold.

    MysorePak

    Finally got some time to try out a recipe.This time am back with a bang...our very old mysorepak.
    Here's how to make it...

    Ingredients:
    1 cup besan/chickpea flour
    2 cups sugar
    2 cups oil
    1/4 cup ghee 

    Method :
    1. Heat oil in a kadai and keep aside in another vessel.
    2. Fry the besan for 5-10min adding some ghee and keep aside in a plate. Add besan in oil and mix it properly.
    3. Add sugar in the same kadai and add 1/2 cup water.Bring sugar to boil then add the oil+besan mixture to it.Stir for few minutes ,around 10-12min.Add ghee while stirring.
    4. Oil starts oozing out.Then pour this mix in the ghee covered plate and distribute all along and finally cut into pieces.
