Madatha Kajaa

One of Andhra's favorite and famous sweet.Tried for the first time and it came out really really well.
All credit goes to my husband who helped me a lot :)


Ingredients :


For making kaja:-

Maida/All purpose flour 2 cup
Ghee/oil                        3 tspns
pinch cooking soda(optional)
water (enough to make a dough like chapati dough)
Oil for deep frying

For making sugar syrup:-

Sugar 3 cups
water 2 cups ( just enough water to cover the sugar)

Method :



  • Take the flour in a bowl,mix it with ghee and water and make a dough.Cover it and keep it a side for 15-20 min.
  • Now take a huge bowl and add sugar and water, keep flame in medium to high. Stir occasionally until the sugar melts in water and the syrup comes to one string consistency . Add the elachi / cardamom powder in the sugar syrup
  • Now mix the dough once again and make small balls out of the dough.
  • Roll the ball on clean surface with rolling pin like single chapati… dough should be rolled to very thin layer.Sprinkle the flour in between while rolling.Make chapathis out of each balls.
  • Starting from the end of each chapathis, carefully  fold  like roll,sprinkling flour between each rolls so that the rolls should not stick to each other.
  • Cut and remove the edges and cut the roll in small 1 inch pieces.Press each  piece slightly with thumb and  roll it with rolling pin(very slightly) twice n keep it on a plate.Repeat the process with the rest of the chapathis.
  • Heat enough oil in a kadai for deep frying . Fry the kaja pieces till they turn to nice golden color.
  • Remove them once golden brown and place them in sugar syrup.Wait for 4 to 5 minutes or till the syrup is well absorbed by those pieces and remove them and serve once cool down.
